Granny's Recipe - Baked Tomato and Onion Pie

The Recipe



This recipe is one my slave driver wife favs.
Take an oven proof dish and grease lightly with margarine or butter. Slice tomatos about 5 mm thickness and layer the base . Add a layer of finely sliced onion (dont overdo the onions) seaon lightly with sea salt and freshly ground pepper and repeat this until the dish is almost full. Grate mild cheddar cheese over the top and add a sprinkle of seasoned breadcrumbs (store bought is ok). Bake in a hot oven for 20-30 minutes.
Serve with Roasts

I love a good rice dish cooked in a claypot.

 Claypot rice dishes make easy and wonderful one-pot dinners. They are very popular in Malaysia & Singapore and it's a must try whenever you visit those countries.

These steaks are Australian Eye Fillet cut from one piece to about an inch thick. Get your butcher to do this or buy a whole fillet and cut yourself to desired thickness.

Chefs Tip: Remember to use a very sharp knife to ensure a clean straight cut.

Season steak with sea salt and freshly ground black pepper and extra virgin olive oil...not too much olive oil..just enough to coat the steaks. leave for about 20 minutes to half an hour to marinate. If you like you can use a little garlic salt on these to further enhance the flavour.

A good heavy grill pan is ideal for this but not essential
